We’re entering that phase of quarantine where the days tend to bleed together, and the edges between weekdays and weekends blur. I’ve been punctuating weekends by making a leisurely brunch with a fully set table and a meal that feels like you might get at a restaurant. It’s not truly brunching out with friends, but it’s definitely brought us some joy. I thought I’d share some easy brunch ideas that will take regular old breakfast up several notches. Maybe give one a try this upcoming weekend? Or treat yourself to an extra special weekday bruncheon.
These are a healthier version of regular pancakes. They have a delicious french toast texture, and the savory quality works really well with a pat of butter and a generous drizzle of maple syrup.
This dish got many compliments from Rich last weekend. It’s light & fluffy, uses spring ingredients, and the bacon adds a delicious salty crunch. It’s great with a side of greens and fruit.
A dutch baby is basically a massive pancake cooked in a pan or cast-iron skillet. It’s thicker and has crisp edges while the middle is soft and cakey. This recipe is a brunch showstopper, and it’s easy to share among a family.
These pastries are absolutely irresistible. They’ve got a buttery and flaky crust with a warm and sweet filling. You can substitute fresh cherries for a can of cherry pie filling if you’re in a hurry.
A healthier take on the classic cake donut, this simple cinnamon donut is baked rather than fried, and then coated with a sweet maple syrup glaze. It’s a milk-and-coffee’s-best-friend donut that’s just begging to be dunked.
Kuku Sabzi is an omelet loaded with fresh herbs. So much so that it takes on a beautiful green color and bursts with flavor.
A galette is basically a rustic tart that tastes like pie but requires much less precision. This one is flaky and buttery and has a deliciously sweet apple-cinnamon filling.
A heartier version of avocado toast, with a layer of creamy hummus, crunchy cucumbers, chili flakes, and a drizzle of sesame oil.
And easier homemade cinnamon rolls recipe that uses pizza dough, which you can make or buy from the store. They’re gooey, buttery, sweet–everything a cinnamon roll should be.
