Weeknights at our place are insane, and we don’t even have kids. That being said, I make it a point to cook fresh meals (none of that out-of-the-box stuff) at least three to four times a week. It’s important to me that I do this, partially because I’m limited on workouts while my leg is healing, but also because my body just feels better when I avoid what I like to call the takeout takeover. This weeknight Mexican meal is a go-to because it comes together in 30 minutes, and it’s downright delicious.
