When summer finally gets here, all I can think about is sweet corn. Even though I’ve lived in NYC for ten years, I hail from a farming community in Illinois. You can take the girl out of the corn, but can’t take the–you get the picture. Now that sweet corn is popping up at the markets here, I’ve been using it to make this delicious sweet corn salad. It comes together in less than ten minutes, requires zero cooking (something anyone who doesn’t have central air can truly appreciate), and it’s a great healthy summer side dish.
